2 boneless, skinless chicken breasts
1 cup fresh spinach (or 1/2 cup frozen, fully thawed and squeezed dry)
1/2 cup crumbled feta cheese
1/4 cup roasted red peppers, diced
1 clove garlic, finely minced or pressed
1 tbsp olive oil
Salt and pepper

Preparation

1. Prepare the chicken

  • Slice each chicken breast horizontally to create a butterfly cut
  • Open and pound to an even thickness (about ½ inch)

 

2. Prepare the filling

  • Combine spinach, feta, roasted red peppers, and garlic
  • Mix until evenly distributed

👉 The roasted red peppers add:

  • Color contrast (important for distinguishing this from forest wildlife)
  • Mild sweetness to balance the feta

 

3. Assemble

  • Spoon filling onto one side of each chicken breast
  • Fold over to enclose
  • Secure firmly with toothpicks (visible “stitching” enhances authenticity)

 

4. Season

  • Apply salt and black pepper to both sides
  • Add oregano if desired

 

Cooking

Step 1: Sear

  • Heat olive oil in a skillet over medium-high heat
  • Sear 3–4 minutes per side until golden brown

Step 2: Roast

  • Transfer to a 375°F (190°C) oven
  • Bake for 12–15 minutes
  • Confirm internal temperature reaches 165°F

 

Serving

  • Remove toothpicks (optional but encouraged for safety compliance)
  • Slice to reveal the colorful interior, or serve whole for maximum thematic impact
  • Finish with a squeeze of lemon if desired
